Crown Roast is easy to do at home, here’s how:

Ingredients

  • 8 – 10 pounds pork crown roast (14 – 16 ribs)
  • 1 1/2 tablespoons olive oil -extra virgin
  • 1 tablespoon minced garlic
  • 1 teaspoon finely chopped fresh sage
  • 1 teaspoon finely chopped fresh marjoram or thyme
  • 1 1/2 teaspoons salt
  • freshly ground black pepper to taste

Instructions

  • Preheat oven to 250°F.
  • Rub pork roast with a light coat of oil and herbs.
  • Season to taste with salt, pepper and minced garlic.
  • Place roast on a rack in a shallow roasting pan, bone end up.
  • Roast the crown roast uncovered until meat thermometer registers 160º.
  • After 30 minutes of roasting, cover the tips of ribs with foil to prevent excessive browning.
  • Continue roasting the crown roast til the meat thermometer registers 160º.
  • Remove the roast from oven and cover with foil, let it sit 10 minutes while it continues to cook.
  • After a rest, place the roast back into a 500°F oven to crisp up the fat on the exterior.
  • To serve your beautiful pork crown roast, remove the foil tips and add the paper frills.
  • Place the roast on a large platter and decorate with cinnamon apples, carrots, and fresh herbs.

 

SPECIAL TIPS:

The hotter your oven temperature, the more uneven your roasting will be.
